Smoking Meat -- Tips, Opinions, Recipes

I might have missed it if it was mentioned earlier in the thread but has anyone smoked cheese? I've tasted some fantastic smoked sharp cheddar but I'm not sure how to pull it off in my barrel smoker without just making a mess... or what kind of wood to use. I guess the idea is to keep the heat as low as possible?

You don’t want any heat. You want smoke. Best option is to go with a smoke tube.
