Here's the final product. I must say it's the best turkey I've cooked yet. It's pretty fool proof using a pellet smoker. I have cooked maybe a half dozen in my life...haha. I brined it for 20 hours. Peeled back the skin and stuffed it with bacon and Kinders buttery garlic herbs seasoning. Stuffed two whole oranges less the peel into the cavity. Rubbed more Kinders on the outside then latticed bacon over the top and sprinkled with butt rub. Smoked it at 225 for about 6 hours (was planning on 4.5) so I cranked it up to 350 to push the last needed 25° and pulled it at 168°. Let it rest for about 30 mins while I finished everything else up.Well?
