Seems like even at internal 115F-120F, it can taste dry. I do a quick sear and nothing more.

Me too. I hated cooking in that RV and was so busy working on the house I pretty much stopped cooking. My wife enjoys it now too. lol

Helping my daughter with her TG dinner in NYC… i made the chicken demi glacé for gravy on Wed, along with the roasted red bell pepper-tomato sauce for the ratatouille…TG was smoked glazed ham, a couple roasted chickens, Cheese soufflé , mashed potatoes & gravy, ratatouille, etc…mac n cheese…
