East coast oysters are my favorite. I’ve only had them once and don’t recall exactly what kind, but the brine flavor was unforgettable.
Fun oyster fact— I read they’re actually alive when you eat them. Because once they’re dead they turn almost immediately.

I usually fill up on little necks and Hoffman’s when I’m back there. Can’t get them out here. Well can get the little necks but they aren’t as good and stupid expensive. I have to order Hoffman’s by the case if I want them out here.

It was a mixture of fresh ground NY strip and fat (80/20 mix) that I had the butcher grind up for me. Small town butchers are the best.
