Sausage ragu…diced salami and italian sausage, sofrito bianco (celery, shallots, leeks)


Deglaze with white wine…add sausage, cover with homemade chicken stock, reduce and simmer 4 hours…


Sauté broccoli rabe, garlic & Calabrian chiles…

Baked beans…ribs with rub, over a bed of celery, onions & fennel tops for moisture…then finished and sauced on the grill…tomato paste, ketchup, brown mustard, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, blk pepper
Collards with smoke ham shank, apple fennel carrot slaw

These are so damn good - it’s so worth the 25 minute drive. Went with the Asada today. Usually get Lengua. Guessed right on the salsa this time too so I didn’t melt my face off.
