Smoking Meat -- Tips, Opinions, Recipes

I've been having food delivered way too often these last few months. I work out of the country and the little kitchen in my studio unit is terrible.

I use the Webber grill once or twice a week, and finally decided to order a Traeger. Pellet grills are not popular here. I had to order from Amazon (USA) and pay the taxes, fees and international shipping. Making a $450 grill $950 and $17 bags of pellets $100ea.

There's a learning curve to this little Traeger Ranger portable grill. It's small size puts the meat close to the heat source, so I've learned to lower the temp 25-50 degrees.

So far it's been fun and gives me something to do on days off. I really want to take a crack at smoking some camel meat.
