Odd oil pressure after oil cooler replacement

I've got a 2018 JKU with 98k miles on it. I had oil suddenly leaking on both sides of the transmission and I changed the oil cooler with one from Amazon that got good reviews since the Mopar is hard to get. All went fine, used Mopar oil seals. Now when it cranks, oil pressure reads in the mid 70s to mid 80s. If you give it a little gas, numbers go up a couple of PSI then suddenly drop to mid 50s. Letting off the gas it falls a few PSI then shows the 70s again. It's not a slow change its like 56.55.54.53.76.75.

After a couple minites it settles down to normal pressures of 28-60 PSI. When driving occasionally will immediately jump from mid 40-50 to around 75, this happens maybe once every mile to 5 miles.

Bad oil sending unit, some odd blockage in the oil cooler or what? No unusual engine noise, lifters are quiet. Unsure if this was an issue before the cooler failure.
 
Before I got my Jeep I had a Yukon that had erratic oil pressure readings. The sending unit was bad (and there was a little screen under it that I also replaced that seemed to cause issues). I got an external oil pressure gauge that attached in place of the oil filter to troubleshoot and find the real pressure (without relying on the sending unit) but you'd have to check to see if you could get one for the jeep since it doesn't have a screw on oil filter.
